Raw Almond Joy’s

Almond Joys

3 cups finely shredded, unsweetened coconut (blend in blender if needed)

1 1/2 cups almond flour (just blend or process whole, raw almonds into a flour)

1 cup pure maple syrup

1/3 cup softened coconut oil

1 tsp vanilla powder

1/2 tsp sea salt

3 Tbls poppy seed or chia seed

Stir until well combined, roll into balls on pan.

Chocolate Sauce:

½ cup cacao powder

¼ cup raw honey or pure maple syrup

1/8 to ¼ cup warm coconut oil

Stir until smooth, drizzle over almond joy balls, top with an almond and a little shredded coconut and freeze until set.  EnJOY!
